Turkey and Sweet Potato Hash


Ok, I know I’ve been horrible about blogging the last month. There is no good excuse for it. Well, actually there is. I started a new job (yay!) and have been pretty busy. I’m working on getting my regular cooking and blogging schedule back and am starting in with a ground turkey and sweet potato hash. I have been on a sweet potato kick lately. Why not- they are delicious and good for you. I’ve mixed it up here with some fresh, ground dark meat turkey to keep it moist and some veggies. It’s an easy and healthy weeknight meal.

Ingredients:
1/2 lb. ground dark meat turkey
3 small sweet potatoes, chopped into small cubes
1/2 yellow onion, diced
1 small red bell pepper, finely diced
1/2 cup dry white wine
3 sprigs thyme leaves
1 1/2 tsp. kosher salt
1/4 tsp. ground black pepper
pinch cayenne
2 tbsp. olive oil

Heat a large skillet on medium high heat. Add a tablespoon of olive oil to the pan. Add the turkey and brown. Remove from the heat and strain. Set aside.

Heat the other tablespoon of olive oil in the pan. Add the diced onions and red peppers. Cook about 2 minutes. Add the white wine and cook another two minutes. Add the sweet potatoes, thyme, cayenne salt and pepper. Reduce heat to medium low, cover and cook 10-12 minutes until the potatoes are fork tender, stirring occasionally to prevent burning or sticking.

Add the strained turkey to the sweet potato mix and cook on low about 2 minutes. Remove from the heat and serve.

    Sweet potato hash is the best thing ever. I even make this with lots of chili. I usually add chicken and beans on my hash and it turns so good to my taste.
