Exotic Spiced Chicken Thighs


This recipe is one of the easiest and tastiest weeknight meals you can make. The chicken thighs are coated in a flavorful spice blend and broiled to give it a crispy outside and juicy inside.

Ingredients (serves 2):

2 whole chicken legs
1 tsp. curry powder
1 tsp. garlic powder
1 tsp paprika
1 tsp. kosher salt
1/2 tsp. black pepper
1/4 tsp. cayenne pepper

Heat the broiler on low. Mix all of the spices in a bowl. Rinse the chicken legs and pat dry. Rub the spice blend all over the chicken legs and place on a broiling pan. Place the broiling rack about 5-6 inches from the broiler. Broil on low, approximately 20 minutes, or until internal temperature reaches 165°. (Check it occasionally to make sure the spices on the chicken don’t burn. A slight char is ok, but if it’s too close to the broiler it could catch fire.) Remove from the broiler and allow to rest 5 minutes before serving.
